Duck Soup with Dried Bamboo Shoots is a nutritious soup served in a large pot containing duck, dried bamboo shoots, and Jinhua Ham. The duck used in the soup is a carefully-selected Jiangnan duck native to the area south of the Yangtze River. In order to preserve the tenderness of duck, it has to be less than sixty days old. With the bamboo shoots providing a sweet and salty flavor, and the Jinhua Ham giving unmatched taste, they both contribute a lot to the spectacular taste of the soup.


The way to prepare the dish is quite simple. First, clean the duck, soften dried bamboo shoots, and blanch Jinhua Ham in boiling water. Then put all the ingredients in a casserole pot with ginger and spring onions on top. After adding in Shaoxing Wine and water, simmer it over low heat for 4-5 hours. Then a rich and gaudy duck soup is ready.
