
China, as a country regarding eating as the first priority, is never lack of delicious food. In the dishes prepared out of duck, Beijing duck is no doubt the most famous one. However, there is also another type of duck popular amongst the residents of Hangzhou — Hangzhou Soy-sauce duck.
Hangzhou Soy-sauce Duck is a traditional local dish which is especially popular during the Spring Festival. It is often served cold. In order to preserve the tenderness of the dish, the duck used in the dish is carefully-selected less-than-one-year-old one. The preparation of the dish is complicated. Generally, cooks have to go through three procedures to prepare. Firstly, to marinate the duck in soy and honey for 72 hours under 0℃ centigrade. Secondly, to sear it over high fire. Thirdly, to simmer the duck in a rich soy sauce with shallots, anise and cinnamon, giving the meat an aromatic flavor that stays juicy. The dish tastes a bit salty and tiny sweet.
