A Hot, Spicy and Salty Hot Pot, Century-Old Heart-Warming Taste

Sichuan has spicy hot pot, while Chun’an has Linqi Hot Pot (临岐暖锅)! Every New Year's Eve when family members reunite, every house relocation, every wedding banquet, every ancestral ancestry ... as long as it is an important occasion, on the dining table of Linqi people, there is always a fresh, spicy, salty and fragrant hot pot. Now, Linqi Hot Pot utensil making and gourmet cooking skills have been included in the county's intangible cultural heritage.

The most authentic cooking method of the "Linqi style" hot pot is the combination of meat and vegetables, which are stacked in four layers. The bottom layer is made with fresh radishes, which are cut into slices, boiled in boiling water, and then put into the pot; the second layer is tofu, which is cut into square slices, and then added in sequence; the third layer is pork belly, which is cooked in advance; the fourth layer is kelp; Lastly, Chun’an spicy sauce is added to season the taste.

In China, there is an old saying “Good tastes result from stewing”. The longer the hot pot is stewed, the more delicious it is. The essence of various ingredients is incorporated into the soup, which is then absorbed by sponge-like tofu. A bit of the tofu and your mouth will be filled with fragrance.
